We caught up with co-founder Camilla for three burning questions alongside her exclusive recipes for a Turmeric Latte and Sprouted Spelt Pancakes.
Sprouted Spelt Pancakes
Ingredients
115g unsalted butter, melted
2 ripe bananas
2 large eggs
2 tbsp honey
2tsp vanilla extract
270g Rude Health Sprouted Spelt Flour
4 tsp baking powder
1/4 tsp salt
coconut oil/butter, for cooking
bananas and honey, for serving
Method
In a medium bowl, whisk together the almond milk, butter, bananas, eggs, honey and vanilla. Set aside.
In a large bowl, mix together the sprouted spelt flour, baking powder and salt. Make a well in the centre and pour in the wet mixture. Stir until just combined.
Heat a few teaspoons of coconut oil or butter in a large skillet over medium heat. Once it is hot, ladle the pancake batter (about 4 tablespoons at a time) onto the pan.
Cook each pancake for about 2 minutes, until bubbles form over the top and the bottom edges are light brown. Flip the pancake over and cook for about 1 more minute, until the golden. Repeat with remaining batter.
Serve with sliced bananas and honey and delve in!

Three Burning Questions
Describe your morning routine?
My alarm goes off at 6.30am during the week, and the children are my alarm at the weekend. Breakfast is a big deal in our household and it gets a half hour slot in the morning routine. At the moment we are starting the day with Rude Health Sprouted Porridge served with pecans, banana, maple syrup & cream. After breakfast I send the children to school and then get ready for the office. It’s a short ride by bicycle to the office along the river, which acts as a mini-meditation to help make the switch from home to Rude Health.
Your favourite workout and why?
My favourite way to wind-down after work is dancing like nobody can see (they can’t) in the kitchen while cooking something nourishing. When the weather is cold I am all about stews and casseroles.
Number one wellness tip?
Do what works for you - I am not a gym person, but cycling to work and dancing make me happy. The same goes for food - don’t deny yourself indulgences, just don’t have them every day, you may even enjoy them more if they really are a once a week treat.
