Naturally Sassy’s Golden Granola
In this final instalment of Naturally Sassy’s Get Fit 4 Free Body By Simone recipe series, Sassy turns her hand to a classic breakfast option with a healthy low-GI twist: Golden Granola.
“Homemade granola is one of the most convenient ways to get a lot of good stuff into your breakfast in one go. At the heart of this recipe are cashews, pecans and oats, which are all great for giving you the energy and protein ahead of a high-energy workout like Body By Simone,” says Sassy. “Using only natural sugars with the addition of coconut flakes and raisins, with a touch of raw cacao, you’ll have plenty of energy to call on when it’s time for your cardio work. Plus, chia seeds help to slow digestion and sustain energy release all day long.”
2 cups oats
1 cup brazil nuts
1 cup pecans
1/2 cup coconut flakes
1/2 cup sultanas/raisins
1/2 cup pumpkin seeds
1/2 cup ground flaxseeds
2tbsp chia seeds
1/4 cup coconut oil
1/4 cup maple syrup
1tsp vanilla extract
1. Preheat your oven to a 180 degrees. While you wait for the oven to warm up, chop your brazil nuts and pecans into small chunks. You can also pulse them in a food processor. Mix in a bowl with the other seeds, coconut flakes, sultanas and oats.
2. In a saucepan, combine the coconut oil, maple syrup, vanilla extract and cinnamon. Heat until the coconut oil is melted. Pour into the dry ingredients and mix until everything is well coated.
3. Spread the mixture on a lined baking tray and place in the oven to cook for 30 minutes. Allow to cool for one hour before tucking in or storing in a sealed container.
