Tasty Wheat-free pancakes!!

OK, you know the way you can feel really guilty when tucking into a pancake, 'cos frankly they taste gooooooodd!!  Well after much experimentation, here is a wheat-free sugar-free version!!  That's right Betties, you read that right!!  Pancakes that be healthy, and the recipe is ridiculous!!

2 eggs
2 tbsp almond nut butter
1 banana, mashed
A small amount of butter or coconut oil

Mix the ingredients together until you get a smooth paste.  Heat the butter/oil in a pan on a medium-high heat.  Add 2-3 tablespoons of the mixture into the pan to make each pancake.  Cook them on both sides for just over a minute and serve!!

I like to serve these up with maybe a little chopped banana, or some berries!!  Too delicious to be true!!  Enjoy!!

I've managed to whip up some wheat free pancakes that literally taste and look like the real deal. You just mix eggs, (almond) milk and psyllium seed husk and then cook it, I'd recommend in coconut oil! The only downside is that the mix thickens quite rapidly due to the psyllium seed so smaller batches are much easier to manage, not to mention it takes a bit longer to cook. But taste- and nutrition wise, it's a winner!
