Jasmine and Melissa Hemsley have taken the health and wellness industry by storm since launching their family-run wellness business for people who want to live healthier, happier lives. The Hemsley's pride themselves on creating meals that are wholesome and nutrient-filled as well as delicious, and began contributing recipes to Vogue in 2012. Their bestselling first cookbook The Art of Eating Well was released in 2014 and their Hemsley Spiralizer - now a must-have kitchen tool - soon followed. Their second book, Good + Simple, launched in February 2016, followed by their first ever day-to-night café, Hemsley + Hemsley at Selfridges. To help with any New Year hangovers, the sisters have shared their recipe for Huevos Rancheros to feast on while you plan out a month of fitness. 

Huevos Rancheros

There is nothing better than eggs for breakfast, especially when you're a bit hungover! This one-pot winner hits all the right spots and will have you feeling back to normal in no time. Organic eggs and creamy guacamole provide protein and fat to keep you feeling satisfied and the spicy tomato sauce will wake up your taste buds and warm your tummy. This is one of our favourite recipes from our cookbook Good and Simple and it's also a hit at our cafe, Hemsley + Hemsley at Selfridges. We like serving it with a big handful of watercress (jam-packed with antioxidants!), a squeeze of lemon juice and plenty of extra virgin olive oil. If you know you're going to have a really sore head the morning after the night before, you can make the sauce in advance and store in an airtight container in the fridge.

Ingredients

4 large handfuls of spinach, roughly chopped
4 eggs
1 large handful of fresh coriander, leaves and stalks roughly chopped
1 small handful of grated mature Cheddar

For the Tomato Sauce

1 large onion, diced
1 tablespoon ghee or coconut oil
2 garlic cloves, finely diced
2 red peppers, halved lengthways, deseeded and sliced into strips
2 bay leaves
1 teaspoon smoked paprika
A pinch of cayenne pepper or finely diced fresh red chilli, to taste
2 x 400g tins of tomatoes or 800g fresh tomatoes
200 ml water (100ml if using fresh tomatoes)
Sea salt and black pepper

For the Guacamole

1 large ripe avocado
1 tbsp of extra virgin olive oil
The juice of ½ - 1 lime
2 spring onions or 1 small handful of fresh chives, chopped
1 handful of fresh coriander leaves, chopped

Method
 

First make the tomato sauce. Fry the onion in the ghee or coconut oil over a medium for about 8 minutes, stirring occasionally, until softened.
 

Add the garlic, peppers, bay leaves and all the spices to the pan and cook for another 2 minutes.
 

Add the tomatoes and water, season generously with salt and pepper, then stir everything together and leave to simmer for 10 minutes until reduced to a thick, rich sauce.
 

Meanwhile, make the guacamole. Halve and stone the avocado, then scoop out the flesh and roughly chop. Place in a bowl and stir in all the remaining ingredients and seasoning. Set aside.

Check the seasoning of the tomato sauce, adding extra salt, pepper and cayenne/chilli as needed, then stir through the spinach and cook for a few minutes until just wilted.


Use a spatula or a spoon to make four wells in the tomato sauce mixture and crack an egg into each. The eggs will poach in the sauce and cook in about 4 minutes (lid on) for set whites and runny yolks.
 

Scatter over the coriander and cheese. Serve immediately (as the eggs will keep cooking) with big heaped spoonfuls of guac on top and a handful of watercress with a big squeeze of lemon.

Describe your morning routine?

These past few years with so much travel and so many time zones every day is different but generally we start with warm water and a squeeze of lemon, body brush, shower and then meditate - meditation is the non-negotiable! If we're at home then somewhere between all those things we'll be running the dogs in the local park (Jas has 3 and Mel has 1). Breakfast is anything from eggs to a smoothie, or leftovers from the night before like Mung Dahl or a soup. If we have a meeting in town, we'll pop to our Hemsley cafe in Selfridges for some delicious banana bread or carrot and quinoa toast with smashed avocado. Mel loves a fresh green juice and Jas enjoys a Flat White with de-caffeinated, organic coffee and full fat organic, unhomogenised milk. 
 
Your favourite workout and why?

Sometimes we might do an exercise class in the morning, Jas loves yoga and Melissa is a fan of Barry's Bootcamp. Whenever we can we’ll wear leggings and a vest to work for comfort, as well as to take advantage of any free hour when we can squeeze in a class.
 
What five items would we always find in your fridge?

Lemons, organic grass-fed butter, cauliflower, homemade bone broth and green leaves of some kind, like spinach, kale or watercress.
